Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large pot, bring salted water to a boil and add carrot rounds. Cook for 10-12 minutes or until fork-tender.
  3. Once the carrots are cool enough, gently smash each round until about half its original thickness.
  4. Drizzle smashed carrots with olive oil, then sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
  5. Roast in the oven for 20-25 minutes, flipping halfway through until golden and crispy.
  6. Sprinkle with freshly chopped parsley before serving hot.
