  1. Begin by gently tearing fresh maitake mushrooms into 2-inch clusters and pat them dry to eliminate excess moisture.
  2. In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, black salt, and ground black pepper. Gradually add cold water, stirring until smooth.
  3. Heat your frying oil in a deep pot or skillet to 160°C (320°F). Dip the battered maitake mushrooms into the hot oil and fry for about 2–3 minutes until golden.
  4. After the first frying, allow the fried maitake mushrooms to cool for 10 minutes. Increase the oil temperature to 190°C (375°F).
  5. Fry the mushrooms again for 1-2 minutes until golden brown and crispy. Remove from oil, sprinkle with salt, and serve immediately with dipping sauce.
