  • 1 Egg To bind the mixture
  • 1/2 cup Ground almonds Can swap with other ground nuts or omit
  • 1 Onion, finely chopped
For the Side Salad
  • 4 cups Mixed salad greens Any variety
  • 2 tablespoons Olive oil Can substitute with avocado oil
  • 1 tablespoon Vinegar Any light vinegar like apple cider

Method
 

Preparation Steps
  1. Steam the broccoli in boiling water for 5–7 minutes until tender. Drain and dry with a towel.
  2. Preheat the oven to 220°C (428°F) and position the rack in the center.
  3. Finely chop the cooked broccoli and onion. Combine in a mixing bowl.
  4. Add the egg, mozzarella, and ground almonds. Season with salt and pepper, then mix well.
  5. Form the mixture into nugget shapes and place them on a greased baking sheet.
  6. Bake in the oven for 10–15 minutes until golden brown.
  7. Prepare the salad by mixing greens, olive oil, vinegar, and seasoning.
  8. Serve the nuggets hot with the mixed salad on the side.
