  • 1 tsp Ground Cumin Coriander can be used as a substitute
  • 1/4 cup Fresh Cilantro Can switch to parsley
  • 1 tbsp Fresh Lime Juice Fresh juice is best

For the Assembly
  • 1 cup Shredded Mexican Cheese Blend Can substitute with cheddar or Monterey Jack
  • 8 pieces Tortillas Flour or corn, warm before use

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and coat a baking sheet with canola oil or parchment paper.
  2. Heat 1 tablespoon of canola oil in a cast-iron skillet over medium-high heat. Add ground chicken, diced sweet onion, and minced garlic. Sauté for 3-5 minutes until browned and onions are translucent.
  3. Stir in chopped green chiles, chili powder, smoked paprika, dried oregano, and ground cumin. Cook for an additional 1-2 minutes until fragrant.
  4. Remove from heat and mix in fresh cilantro and lime juice. Season with salt and pepper to taste, then incorporate shredded cheese.
  5. Spread the chicken filling over one half of each tortilla, sprinkle cheese on top, and fold to seal. Repeat for all tortillas.
  6. Place assembled tacos on the baking sheet, brush with remaining oil, and bake for 12-15 minutes until golden brown and crispy.
  7. Serve the tacos warm with toppings like pico de gallo, guacamole, lettuce, and lime wedges.
