  • 1 packet Taco Seasoning Use your favorite brand or try a homemade blend.
  • 1 cup Red Enchilada Sauce Feel free to swap with green enchilada sauce.
For the Tacos
  • 8 oz Oaxaca Cheese (or Mexican Cheese Blend / Monterey Jack) Any melty cheese works.
  • 8 pieces Corn Tortillas Flour tortillas can be used but may require different cooking times.
  • 2 tablespoons Olive Oil Can also use avocado or canola oil.

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). Gather your ingredients and equipment.
  2. In a large skillet over medium-high heat, brown the lean ground beef for about 5-7 minutes. Stir in taco seasoning and red enchilada sauce, simmer for 2-3 minutes.
  3. Warm the corn tortillas by stacking them and covering with damp paper towels, microwave for 30-60 seconds.
  4. Brush one side of each tortilla with olive oil and lay them on a baking sheet oiled-side down.
  5. Assemble the tacos by layering cheese and seasoned beef, folding the tortilla in half and pressing gently.
  6. Bake the assembled tacos for 16 minutes until golden brown and crispy.
  7. Cool for 3 minutes before serving warm with desired toppings.
