  • 1 cup Self-Raising Flour or mix plain flour with baking powder
  • 1 teaspoon Garlic Powder or fresh garlic for bolder flavor
  • 1 teaspoon Onion Powder or sautéed fresh onion
  • 1 tablespoon Dried Chives substitute with green onions or omit
  • to taste Salt and Pepper adjust to preference
  • 2 large Eggs can use flax eggs for vegan option
  • 1 cup Milk use non-dairy milk for lactose-free option
For the Fillings
  • 1 cup Corn Kernels canned or frozen, drained
  • 1 cup Cheddar Cheese grated, can substitute with gouda
For Frying
  • 2-3 tablespoons Olive Oil or vegetable oil

Method
 

Cooking Instructions
  1. Cook diced bacon in a large frying pan over medium-high heat for about 3-4 minutes until crispy and golden brown.
  2. In a mixing bowl, combine self-raising flour, garlic powder, onion powder, dried chives, salt, and pepper. Mix thoroughly.
  3. Make a well in the dry mixture and add whisked eggs and milk. Stir gently until combined, being careful not to overmix.
  4. Fold in crispy bacon, drained corn, and grated cheddar cheese into the batter.
  5. Heat oil in the frying pan over high heat. Spoon the batter into the hot oil, flattening slightly. Fry for 3-4 minutes per side.
  6. Remove fritters from the pan and place on paper towels. Serve hot, garnished with lemon wedges or parsley.
