  1. Prepare the mozzarella balls by gently pressing a small indentation into the top of each, creating a place for the 'eyes.'
  2. Finely chop the kalamata olives and place one piece into each indentation of the mozzarella balls.
  3. Slice the pepperoni stick into 3/4 inch pieces, then cut some into thin strips.
  4. Slice the red bell pepper into small wedges.
  5. Assemble the skewers by threading a red pepper wedge, followed by a slice of pepperoni, a mozzarella ball with the olive eye facing out, and so on.
  6. Chill the assembled skewers in the refrigerator for at least 30 minutes.
