  • 1 teaspoon Italian Seasoning can be replaced with individual dried herbs
  • 1/2 teaspoon Black Pepper use freshly ground for the best flavor
For the Creamy Base
  • 1 cup Heavy Cream use half-and-half or plant-based alternative for lighter version
  • 1/2 cup Parmesan Cheese can experiment with Pecorino Romano for stronger flavor
  • 2 cups Chopped Spinach kale or swiss chard can be good substitutes
  • 9 ounces Cheese Tortellini (cooked) any filled tortellini variation can be used

Instructions
  1. Heat the olive oil in a large skillet over medium heat for about 2 minutes until shimmering.
  2. Sauté the diced shallots and minced garlic for about 3 minutes until translucent and fragrant.
  3. Add halved cherry tomatoes, cooking for approximately 10 minutes until they soften and burst.
  4. Stir in the roasted red peppers and tomato paste, seasoning with salt, dried basil, Italian seasoning, and black pepper.
  5. Pour in the heavy cream and bring to a gentle simmer, cooking for 2-3 minutes until the sauce thickens.
  6. Incorporate chopped spinach and cooked cheese tortellini, stirring gently for about 2 minutes.
  7. Taste and adjust seasoning, then garnish with chopped parsley or fresh basil before serving.
