Ingredients
  

Ice Cream Base
  • 1 cup Protein Shake or Milk substitute with almond, coconut, or soy milk if desired
  • 1 cup Greek Yogurt use nonfat or whole based on preference
  • 1/2 cup Pistachios can swap for raw, roasted, salted, or honey-roasted
  • 1 piece Medjool Date acts as a natural sweetener; can use other dried fruits
  • 1 pkg Pistachio Jell-O Instant Pudding either regular or zero-sugar versions work
  • 1 tsp Almond Extract optional
  • 1/4 tsp Salt balances sweetness
Mix-Ins
  • 1/4 cup Chopped Pistachios for added crunch
  • 1/4 cup White Chocolate or dark chocolate for richer taste
  • 1 piece Additional Medjool Dates for extra sweetness

Method
 

Preparation
  1. In a high-powered blender, combine the protein shake or milk, Greek yogurt, pistachios, Medjool date, pistachio Jell-O powder, almond extract, and salt. Blend on high for about 1-2 minutes until the mixture is smooth and creamy.
  2. Pour the mixture into the Ninja Creami pint and seal the lid tightly. Freeze for at least 24 hours.
  3. After freezing, let the pint sit at room temperature for about 5 minutes. Place the pint in the Ninja Creami and select the 'Lite Ice Cream' setting. Process for 2-3 minutes.
  4. Scrape down the sides and create a well in the center. Add desired mix-ins and drizzle a tablespoon of milk on top.
  5. Return the pint to the Ninja Creami and select the 'Mix-In' setting. Process for another 1-2 minutes.
  6. Serve immediately for a soft texture or seal and freeze for later.
