Ingredients
  

For the Casserole
  • 16 oz Chopped Frozen Broccoli
  • 4 cups Cooked and Shredded Chicken Rotisserie chicken is recommended for easier preparation
  • 10.5 oz Condensed Cream of Mushroom Soup Can substitute with cream of chicken or homemade white sauce
  • 1 cup Mayonnaise Greek yogurt can be used as a lighter alternative
  • 1 cup Sour Cream Can be replaced with plain yogurt
  • 2 cups Sharp Cheddar Cheese Use gouda or mozzarella as alternatives
  • 2 Tbsp Fresh Lemon Juice Substitute with vinegar if necessary
  • 1 Tbsp Curry Powder Adjust according to taste
  • 1/2 cup Dry White Wine Chicken broth can be used as a non-alcoholic option
  • 1/2 cup Freshly Grated Parmesan Cheese For topping
For the Topping
  • 1 cup Soft Breadcrumbs Can use crushed crackers or panko
  • 1/4 cup Melted Butter Can be replaced with olive oil
  • Salt and Freshly Ground Black Pepper For seasoning to taste

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked and shredded chicken, chopped frozen broccoli, condensed cream of mushroom soup, mayonnaise, sour cream, fresh lemon juice, and curry powder. Stir until well blended.
  3. Fold in half of the sharp cheddar cheese into the chicken mixture, then pour in the dry white wine. Stir gently to combine.
  4. Grease a 9x13-inch casserole dish and transfer the chicken and broccoli mixture into it, spreading it evenly.
  5. Sprinkle the remaining sharp cheddar cheese over the top, then mix Parmesan cheese and soft breadcrumbs with melted butter and sprinkle over the casserole.
  6. Bake in the preheated oven for 30 to 35 minutes until bubbly and golden brown.
  7. Allow to cool for 5-10 minutes before serving.

Notes

Using rotisserie chicken saves time. Feel free to swap vegetables as per your preference. Stir halfway through baking for even cooking.
