- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, melt a splash of butter and sear the chicken thighs skin-side down for 4-5 minutes until golden brown.
- Flip the chicken and brown the other side for an additional 3 minutes, then remove and set aside.
- In the same skillet, add more butter if needed, then sauté sliced onions and tart apples over medium heat for about 5 minutes until softened and translucent.
- Deglaze the skillet with chicken broth, scraping up brown bits and simmer for a minute.
- Nestle the browned chicken thighs back in the skillet, pour heavy cream over, and sprinkle fresh thyme on top.
- Transfer the skillet to the oven and bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Let the casserole rest for 5 minutes before serving with crusty bread, mashed potatoes, or green salad.

Notes
Prep ingredients ahead to streamline the cooking process. Pat chicken dry before searing for crispy skin. If sauce is too thin, simmer to thicken before serving.
