Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles in salted boiling water for about 2 minutes less than package directions. Drain and spread on wax paper.
  3. In a mixing bowl, combine ricotta cheese, chopped fresh spinach, minced garlic, oregano, salt, and pepper. Mix thoroughly.
  4. Spread a thin layer of pumpkin puree in the baking dish, then layer cooked noodles, ricotta-spinach mixture, and mozzarella cheese. Repeat layers and finish with noodles and pumpkin puree.
  5. Bake uncovered for about 30 minutes until the top is golden brown and bubbling.
  6. Let the lasagna rest for at least 10 minutes before slicing.
