- Cook lasagna noodles in salted boiling water for about 2 minutes less than package directions. Drain and spread on wax paper.
- In a mixing bowl, combine ricotta cheese, chopped fresh spinach, minced garlic, oregano, salt, and pepper. Mix thoroughly.
- Spread a thin layer of pumpkin puree in the baking dish, then layer cooked noodles, ricotta-spinach mixture, and mozzarella cheese. Repeat layers and finish with noodles and pumpkin puree.
- Bake uncovered for about 30 minutes until the top is golden brown and bubbling.
- Let the lasagna rest for at least 10 minutes before slicing.
