Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Finely chop the onion and green bell pepper, then mince the garlic.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, bell pepper, garlic, egg, Worcestershire sauce, salt, black pepper, thyme, and oregano. Mix gently until just combined.
  4. Shape the meat mixture into a loaf and transfer it to a loaf pan.
  5. In a small bowl, mix ketchup, brown sugar, apple cider vinegar, and mustard for the glaze. Set aside half for later.
  6. Brush the meatloaf with the remaining glaze and bake for 1 hour, brushing with reserved glaze halfway through.
  7. Check the internal temperature; it should be 160°F (70°C).
  8. Let the meatloaf rest for 10 minutes before slicing.
