- Finely chop the onion and green bell pepper, then mince the garlic.
- In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, bell pepper, garlic, egg, Worcestershire sauce, salt, black pepper, thyme, and oregano. Mix gently until just combined.
- Shape the meat mixture into a loaf and transfer it to a loaf pan.
- In a small bowl, mix ketchup, brown sugar, apple cider vinegar, and mustard for the glaze. Set aside half for later.
- Brush the meatloaf with the remaining glaze and bake for 1 hour, brushing with reserved glaze halfway through.
- Check the internal temperature; it should be 160°F (70°C).
