  • 1 cup Chickpea Flour
  • 2 cups Water
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt adjust to taste
  • 1/4 teaspoon Cayenne Pepper leave out if desired
  • 1/2 teaspoon Cumin optional
  • 1/4 teaspoon Fresh Cracked Pepper substitute with ground pepper if needed
  • Vegetable Oil for frying any neutral oil works
  • 2 tablespoons Parsley for garnish
For the Lemon Tahini Dip
  • 1 cup Greek Style Yogurt or dairy-free yogurt for vegan
  • 1/4 cup Tahini
  • 1 tablespoon Lemon Juice fresh juice preferred
  • 1 clove Garlic minced
  • 1 teaspoon Salt adjust to taste

Method
 

Step‑by‑Step Instructions
  1. Prepare the pan by lining a 9x5 loaf pan with plastic wrap or parchment paper.
  2. In a mixing bowl, whisk together chickpea flour, salt, cayenne pepper, cumin, and fresh cracked pepper until well combined.
  3. In a saucepan, bring water and olive oil to a boil, then whisk in the chickpea flour mixture until smooth.
  4. Transfer the thick batter into the prepared loaf pan, smooth the top, cover, and refrigerate for 2-3 hours until firm.
  5. Whisk together yogurt, tahini, lemon juice, garlic, and salt in a bowl to make the dip. Chill until ready to serve.
  6. Remove the batter from the pan and slice into strips. Heat vegetable oil in a pot to 350-360°F and fry the strips until golden brown.
  7. Drain fried chickpea fries on paper towels, season with salt, and garnish with parsley. Serve with the lemon tahini dip.
