Preparation Steps
- In a large bowl, combine 16 ounces of mascarpone cheese with 1 cup of heavy cream. Beat for 2-3 minutes until smooth and fluffy.
- Add 1/4 cup of amaretto liqueur, 1/3 cup of cherry juice, and 1 teaspoon of vanilla extract. Mix on low speed until fully incorporated.
- In a separate bowl, mix 1/4 cup of granulated sugar with 1/2 cup of cherry preserves, then fold into the mascarpone mixture.
- Chop 1 cup of fresh cherries and fold them into the mascarpone mixture.
- Prepare a dish with 1/4 cup amaretto and 1/3 cup cherry juice. Dip each ladyfinger quickly and arrange them in a baking dish.
- Spread half of the mascarpone mixture over the dipped ladyfingers.
- Layer more dipped ladyfingers and top with the remaining mascarpone mixture.
- Cover with plastic wrap and chill for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and top with shaved dark chocolate.
- Slice into squares and serve with coffee or espresso.
