Method
 

Preparation Steps
  1. In a large bowl, combine 16 ounces of mascarpone cheese with 1 cup of heavy cream. Beat for 2-3 minutes until smooth and fluffy.
  2. Add 1/4 cup of amaretto liqueur, 1/3 cup of cherry juice, and 1 teaspoon of vanilla extract. Mix on low speed until fully incorporated.
  3. In a separate bowl, mix 1/4 cup of granulated sugar with 1/2 cup of cherry preserves, then fold into the mascarpone mixture.
  4. Chop 1 cup of fresh cherries and fold them into the mascarpone mixture.
  5. Prepare a dish with 1/4 cup amaretto and 1/3 cup cherry juice. Dip each ladyfinger quickly and arrange them in a baking dish.
  6. Spread half of the mascarpone mixture over the dipped ladyfingers.
  7. Layer more dipped ladyfingers and top with the remaining mascarpone mixture.
  8. Cover with plastic wrap and chill for at least 4 hours, preferably overnight.
  9. Before serving, dust with cocoa powder and top with shaved dark chocolate.
  10. Slice into squares and serve with coffee or espresso.
