  • 1 medium Grated Carrot can be omitted
  • 1 small Red Onion finely chopped
  • 1 handful Fresh Parsley
  • 1 tsp Garlic Powder or fresh garlic
  • 1 tsp Smoked Paprika or regular paprika
  • to taste Salt
  • to taste Pepper
For the Wraps
  • 2 large Tortillas (Flour or Whole Wheat) or gluten-free tortillas
  • 1 handful Shredded Lettuce can use spinach
  • 1 medium Diced Tomatoes
  • 1 cup Shredded Cheese (Optional) or vegan cheese
  • to taste Ranch or Blue Cheese Dressing (Optional) vegan versions available

Method
 

Step-by-Step Instructions
  1. Mash the chickpeas until creamy yet chunky in texture.
  2. Combine all filling ingredients in a bowl and mix thoroughly.

  4. Spoon the chickpea mixture onto the center of each tortilla.
  5. Roll the tortillas firmly from bottom to top, encasing the filling.
