  • 1 cup old-fashioned rolled oats substitute with large flake oats if desired
  • 1 cup almond milk or coconut/cashew milk
  • ½ cup coconut yogurt can be swapped for any non-dairy yogurt
  • 2 tablespoons chia seeds adds thickness
For the Blueberry Compote
  • 1 cup fresh blueberries can substitute with other berries
  • 1 tablespoon chia seeds additional thickening agent
  • 2 tablespoons pure maple syrup or raw honey/rice malt syrup
  • ½ tablespoon lemon juice for freshness
For Topping
  • ¼ cup granola your favorite mix for crunch

Method
 

Instructions
  1. In a large mixing bowl, combine rolled oats, almond milk, coconut yogurt, and chia seeds. Stir until well blended.
  2. Stir in maple syrup and lemon juice, then fold in half of the fresh blueberries. Cover and refrigerate overnight.
  3. In the morning, prepare the blueberry compote with remaining blueberries, chia seeds, maple syrup, and lemon juice in a saucepan. Simmer until thickened.
  4. Spoon oats into bowls, top with blueberry compote and granola. Serve immediately.
