Preparation Steps
  1. Preheat your oven to 350°F (175°C) and gather your baking dish, mixing bowl, and skillet.
  2. In a skillet over medium heat, melt 2 tablespoons of unsalted butter. Stir in 1/2 cup of brown sugar and 1 teaspoon of cinnamon, allowing to caramelize.
  3. Add sliced ripe bananas and cook for 5 minutes until golden.
  4. Add 1/4 cup of dark rum and 1 teaspoon of vanilla extract to the skillet, then flambé for about 30 seconds.
  5. In a mixing bowl, whisk together 1 cup of flour, 2 teaspoons of baking powder, 1/4 teaspoon of salt, and 1/2 cup of sugar. Add 1 cup of milk, 1 beaten egg, and 1/4 cup of melted butter, stirring until smooth.
  6. Pour the caramelized banana mixture into a greased baking dish and spread the batter over the top.
