  • 1/2 cup unsalted butter softened
  • 1 cup sugar
  • 2 eggs or 1/2 cup whole milk yogurt for eggless version
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour or gluten-free blend
  • 1 teaspoon cardamom adjust to taste
  • 1.5 teaspoons baking powder ensure fresh
  • 1/2 teaspoon baking soda ensure fresh
  • 1/4 teaspoon salt use sea or kosher salt
  • 1/2 cup whole milk or nut-free unsweetened milk
For the Topping
  • 1/4 cup sliced almonds or substitute with chopped pistachios
  • powdered sugar optional for dusting

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round springform pan.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, cardamom, and salt.
  3. Cream butter and sugar until light and fluffy, about 1-2 minutes.
  4. Incorporate eggs or yogurt substitute and vanilla extract; mix until blended.
  5. Alternately add dry mixture and milk to wet ingredients, beginning and ending with dry ingredients.
  6. Fold in sliced almonds gently.
  7. Pour batter into prepared pan; top with additional sliced almonds.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let cool in pan for 10 minutes before transferring to a wire rack.
  10. Serve with masala chai or coffee.
